Chicken and Mushrooms


Ingredients:
3 cups sliced mushrooms
4 chicken breasts, halved
2 eggs, beaten
1 cup seasoned bread crumbs ( I Add some grated Parmesan cheese, salt and pepper)
2 Tablespoons butter
6 oz. grated mozzarella cheese
3/4 cup chicken broth
Directions:
Preheat oven to 350. Place half of the sliced mushrooms in the bottom of a baking dish. Dip chicken into beaten eggs and then roll in the bread crumbs. In skillet, melt butter on medium heat, and brown both sides of the chicken. Place browned chicken on top of the mushrooms in the baking dish. Place remaining mushrooms on top of the chicken and cover in grated mozzarella cheese. Pour chicken broth over it all and bake for 1 hour or until juices run clear from the chicken.
This is a great recipe to make up ahead of time and bake right before you need it. We have it with spaghetti, but it can also be served over rice. Enjoy!

Nutella Chocolate Chip Cookies


Nutella Chocolate Chip Cookies 

 Ingredients:
1 1/3 cup flour
1/2 teas. baking powder
1/2 teas. baking soda
1/4 teas. salt
1/2 cup softened butter
1/2  cup Nutella
1/3 cup white sugar 
1/2 cup brown sugar
1 egg
1 teas. Vanilla
1 cup chocolate chips


1.  Preheat oven to 375.  Cream butter, nutella and sugars.  Beat for 3 min. Add eggs and vanilla.  Add dry ingredients and chocolate chips.  Refrigerate dough for a few hours.  Place on cookie sheet and bake for 8-10 minutes.  


These are now my favorite chocolate chip cookies.  They are crispy on the outside and chewy on the inside.  You will not be disappointed if you try them!

Jan/Feb 2012


Stephen and Ellen came for a visit and we had a wonderful time!



We went ice skating in St. Paul. It was such a pretty day and we all had a blast.
